  1. 4 Potatoes (medium)

  2. 1 1/2 cups 355ml Skim milk - or soy milk

  3. 2 tablespoons 30ml Flour

  4. 1/2 teaspoon 2 1/2ml Salt

  5. 1/4 teaspoon 1 1/3ml Garlic powder

  6. 1/4 teaspoon 1 1/3ml Cayenne pepper

  7. 1/2 cup 31g / 1.1oz Onion - chopped

  8. 1/2 cup 73g / 2.6oz Cheddar cheese - low-fat, shredded

  1. Peel and slice potatoes thinly. In a saucepan, combine milk, flour, salt, garlic powder and cayenne pepper and cook over medium heat until sauce thickens. Add onions to sauce.

  2. Layer casserole dish with potato slices. Spoon half of sauce over slices and repeat with remaining potatoes and sauce. Cover and bake in oven preheated at 350F for 65 minutes. Optional: remove from oven and sprinkle with low-fat cheddar cheese.
