  1. 1/4 pound butter or margarine

  2. 3 pounds breasts of chicken

  3. 1 cup chopped green onions

  4. 2 medium green peppers cut in

  5. 1" squares

  6. 1 cup sliced celery

  7. 1 can (3 oz) sliced mushrooms

  8. 1 chicken bouillon cube, crushed

  9. 1 jar (2 oz) pimientos

  10. 1/2 cup whole cashews

  11. salt and pepper to taste

  12. 6 cups cooked rice (2 cups uncooked)

  1. Directions Using heavy skillet or electric skillet, sauté in butter the boned and diced chicken until opaque. Add next four ingredients to tender crisp stage. Stir in pimentos, bouillon cubes and cashews. Adjust seasonings. Serve on cooked rice with soy sauce if desired.
