  11. : CREPES:

  12. 1 c flour

  13. 1 c skim milk

  14. 1/2 c Egg Beaters

  15. 99% egg

  16. : substitute

  17. 1 TB maragarine -- melted

  18. For Crepes: In medium bowl, blend flour, milk, Egg

  19. beaters and margarine;let stand 30 minutes.

  20. Heat lightly greased 8-inch non-stick skillet or crepe

  21. pan over medium-high heat. Pour in scant 1/4 cup

  22. 1 to

  23. 30 seconds to

  24. 1 minute

  25. more. Place on waxed paper, Stir batter and repeat to

  26. make a total of 10 crepes.

  27. In small bowl, combine cottage cheese, egg beaters and sugar; spread about 2 tablespoonfuls mixture down

  28. center of each crepe. Fold crepes into thirds; fold

  29. top and bottom of each crepe to meet in center forming

  30. blintzes. In lightly greased nonstick skillet, over

  31. medium heat,place blintzes seam-side down; cook for 4

  32. minutes or until golden brown. Turn over and cook 4

  33. more minutes or until golden brown. Top with Raspberry

  34. Sauce...

  35. RASPBERRY SAUCE: In blender or food processor;puree 1

  36. 16oz.
