  2. 1 lb Fresh medium mushrooms, stems removed

  3. 1 c Olive oil

  4. Grated zest of 1 medium orange

  5. Grated zest of 1 medium lemon

  6. 1/2 c Fresh orange juice

  7. 1/2 c Fresh lemon juice

  8. 2 large Garlic cloves, very finely chopped

  9. 2 ts Salt

  10. 2 ts Mustard seed

  11. 2 ts Finely chopped cilantro leaves

  12. 1/2 ts Cayenne

  13. 1/2 ts Freshly ground black pepper

  1. Place mushrooms, oil, zests and juices in a non reactive saucepan over highheat. Bring just to a boil and remove from heat. Transfer mixture to aglass jar or bowl, and stir in garlic, salt, mustard seed,oregano,cilantro, cayenne, and pepper. Allow to cool completely, then coverand refrigerate, stirring occasionally, for at least 24 hours beforeserving. Drain mushrooms and serve.
