  1. 1 kg. orange pumpkin

  2. 500 gms. Sugar

  3. 150 gms. Salt

  4. 1 small bulb garlic (peeled)

  5. 1 tsp. garam masala powder

  6. 2 tsp. red chilli powder

  7. 400 ml white vinegar

  8. 5-6 drops red colour

  9. 3 tbsp. oil

  1. Peel and chop pumpkin fine.

  2. Take care to discard seeds and stringy pith.

  3. Grind garlic to a fine paste.

  4. Heat oil in a large pan, add garlic.

  5. Saute till light brown, stirring continuously.

  6. Add chillies, garam masala, stir for a minute.

  7. Add pumpkin and salt. Mix and cover.

  8. Simmer stirring occasionally, till pumpkin is soft.

  9. Add sugar and cook till a very soft lump is formed.

  10. Cool to room temperature.

  11. Add vinegar and blend in mixie.

  12. Strain and add colour.

  13. Mix and preserve
