  1. YOGHURT AND ORANGE CAKE

  2. 6 oz caster sugar

  3. 4 oz margarine

  4. 2 eggs

  5. 6 oz self-raising flour

  6. 5 fl oz plain yoghurt

  7. 3 oz frozen concentrated orange juice, thawed

  8. 2 oz butter

  9. 6 oz icing sugar

  10. 2 tbsps frozen concentrated orange juice, thawed

  11. Cream caster sugar together with margarine. Beat in eggs, then fold

  12. in the flour, yoghurt and 3oz orange juice. Mix well, then divide

  13. mixture between two well-greased cake tins and bake for 30-35

  14. minutes at 190 deg C, until a knife inserted comes out clean. Leave

  15. to cool.

  16. Meanwhile, make the butter icing by first beating the butter until

  17. nearly white, then gradually adding the icing sugar and 2 tbsps

  18. orange juice. Use half of the mixture to sandwich the two cake

  19. halves together, and the other half to spread on top. Enjoy!
