  1. Ingredients :Serves 4

  2. 225 g 4-6 115 g 1 bunch 1/2 Small cucumber

  3. Dried rice sticks (vermicelli)

  4. Lettuce leaves, shredded

  5. Bean sprouts

  6. Mixed basil, coriander (cilantro), mint and oregano, stalks removed,

  7. leaves shredded

  8. Lime, squeezed and juiced

  9. Nuoc mam or nuoc cham, to drizzle

  1. Peel the cucumber, cut it in halflengthways, remove the seeds, and cut into matchsticks.

  2. Add the rice sticks to a pan of boilingwater, loosening them gently, and cook for 3-4 minutes, or until whiteand al-dente.

  3. Drain, rinse under cold water, and drainagain.

  4. In a bowl, toss the shredded lettuce, beansprouts, cucumber and herbs together. Add the noodles and lime juice andtoss together.

  5. Drizzle with a little nuoc mam or nuoccham for seasoning, and serve immediately.
