  7. 2 1/2 c Graham cracker crumbs

  8. 1/2 c Melted butter

  9. 1/2 c Sugar

  10. 5 pk Softened cream cheese (8oz)

  11. 1 3/4 c Sugar

  12. 3 tb Flour

  13. 2 ts Lemon peel

  14. 1 1/2 ts Orange peel

  15. 1/4 ts Vanilla

  16. 5 Large eggs

  17. 2 Egg yolks

  18. 1/4 c Heavy cream

  19. 3/4 c Sour cream

  20. 1 Ripe mango

  21. 1/4 c Sugar

  22. 1 pk Frozen raspberries,lt syrup

  23. 1 Kiwifruit,pared,sliced

  24. 1/4 c Fresh raspberries

  25. Preheat oven to 450 F. Make crust-With fork, toss

  26. graham cracker crumbs with butter and sugar until

  27. moistened. Transfer to 9-inch springform pan. Evenly

  28. press onto pan, sides and bottom. Bake until golden, 5

  29. minutes. Cool Heat oven to 450 F.

  30. Make filling- In large bowl, at high speed, beat

  31. cream cheese with sugar, flour, peels and vanilla

  32. until blended. At medium speed, beat in eggs and yolk,

  33. one at a time, scraping bowl occasionally. Beat in

  34. heavy cream. Pour mixture in prepared pan.

  35. 10 minutes. Lower temperature to

  36. 300 f. Bake

  37. hour, 10 minutes. Filling mixture will be loose but

  38. will set on standing. Cool cake on wire rack 2 hours.

  39. With spatula, spread sour cream over top of cake to

  40. 1/2 inch of edge. Refrigerate

  41. 3 hours or overnight. Pare mango, slice flesh from pit. Cut enough slices into small triangles to make 1/4 cup.

  42. Place remaining in food processor. Add sugar. Process

  43. until pureed. Pour into small bowl.

  44. In clean food processor, puree raspberries with their

  45. syrup. Pour through sieve placed on saucepan. Stir in

  46. cornstarch. Bring to boiling, simmer 1

  47. minute (stirring)until thick and clear. Pour into small

  48. bowl. Cover, refrigerate til cold Remove cake from

  49. pan, place on serving dish. Spoon mango and raspberry

  50. sauces over top of cake. Garnish with mango, kiwifruit

  51. and fresh raspberries. Pass remaining fruit sauces.
