  1. 1 ea Clove garlic 

  2. 1/2 ts Dried rosemary leaves

  3. 2 ts Canola oil 

  4. 1 x Freshly groun black pepper

  5. 1/2 c Lefover vegetables 

  6. 3/4 c Egg substitute

  7. 1/2 ts Dried thyme leaves 

  8. 2 ea Egg whites

  9. 1/2 ts Dried basil leaves 

  10. 2 tb Grated Parmesan cheese

  1. An Italian version of the omelet. Makes a nice brunch or lunchion dish for two. Mince garlic and saute in oil in a 7′ skillet until softened. Add vegetables and seasonings and cook very briefly, just to heat. Beat egg substitute and egg whites together;stir in Parmesan cheese. Pour over vegetable mixture and cook until golden on the bottom. Turn over with a broad spatula and cook until other side is golden, or, without turning. place under broiler until top is set and very lightly browned. Serve from skillet.
