  1. 1(32 oz.) can whole tomato es, drained

  2. 1 cup fresh basil leaves, washed and dried

  3. 4 tablespoons extra-virgin olive oil

  4. 6 cloves garlic , peeled

  5. Salt and pepper to taste

  6. 2 large baguette s, sliced 1-inch thick

  7. 1 1/2 pounds fresh mozzarella cheese, sliced 1/4-inch thick

  8. If desired, extra basil for garnish

  1. Preheat oven to 375°F.

  2. In the bowl of a food processor, or blender, add drained tomatoes, basil leaves, olive oil and 2 cloves of the garlic. Pulse until smooth but somewhat chunky. Season with salt and pepper.

  3. On a baking sheet, line up baguette slices. Toast in oven for about 3 to 5 minutes or until light golden brown. Working quickly, rub the remaining garlic cloves on the toasted side of each slice* and then lay a piece of mozzarella on top. Place bread back in oven and melt cheese slightly, about 1 minute. Remove from oven and spread one spoonful of the tomato mixture on each piece of bread.

  4. Serve and garnish with extra chopped basil.
