  2. Title: Lamb in a hot garlic sauce

  5. 1/2 lb Spinach or any green

  6. Vegetable

  7. 2 tb Vegetable oil

  8. 1/2 lb Lean lamb, thinly sliced

  9. 4 Cloves garlic,finely chopped

  10. Freshly ground white pepper

  11. 1/2 ts Sugar

  12. 1 tb Nuoc Mam sauce

  13. 1 tb Oyster sauce

  14. Fresh sprigs of mint and/or Cilantro to garnish

  15. Blanch the greens in boiling water for 1 minute. Drain and place on a

  16. serving dish.

  17. Heat the oil in a wok and stir-fry the lamb until nearly cooked. This

  18. should not take more than 2 minutes. Add the garlic, pepper, sugar, Nuoc

  19. Mam sauce, and oyster sauce and stir-fry until the lamb is completely

  20. cooked and tender.

  21. Pour the lamb and sauce over the greens. Garnish with mint and/or cilantro. --
