  2. 225g orzo

  3. 2 tbsp extra-virgin olive oil

  4. 1 small to medium courgette, diced

  5. 1/2; red onion, chopped

  6. 3 cloves garlic, chopped

  7. Salt and freshly ground black pepper

  8. 1 (425g) can chick peas, drained

  9. Handful of parsley leaves, chopped

  10. 4 tbsp mint leaves, finely chopped

  11. 60g feta or goat cheese, crumbled

  1. Orzo with chick peas 1) Bring a large pot of salted water to a boil. Add orzo and cook to al dente.

  2. Heat extra-virgin olive oil in a skillet, add courgettes, onions and garlic, season with salt and pepper and cook 6 to 7 minutes until tender, add chick peas and heat through. Toss with herbs, orzo and cheese, adjust salt and pepper and serve.
