  1. 1 c Cooking dates, chopped

  2. 1 c Boiling water

  3. 2 tb Vegetable oil/vegetable

  4. -- shortening

  5. 3/4 c All purpose white flour

  6. 1 ts Vanilla

  7. 1 ts Baking soda

  8. 1 c Brown sugar

  9. 1/2 ts Baking powder

  10. 1/2 ts Salt

  11. 1 c Walnuts, chopped

  1. Combine dates, water and oil or shortening. Let cool.

  2. Combine the baking soda with the flour and mix well. Add the brown sugar, baking powder, vanilla, salt and nuts to the date mixture. Mix well. Gently fold in the flour and baking soda mixture. If too dry, add a little more water.

  3. Bake in greased muffin pans at 325F for 25 minutes, or until cooked through.
