  1. 2 cups all-purpose flour

  2. 1/2 cup granulated sugar

  3. 3 teaspoons baking powder

  4. 1 teaspoon salt

  5. 2 teaspoons pumpkin pie spice

  6. 1/2 cup quick cooking oatmeal

  7. 1 cup chopped dried apricot

  8. 1/2 cup chopped walnuts

  9. 2 large eggs

  10. 1 1/3 cups milk

  11. 1/4 cup vegetable oil

  1. Sift together flour, sugar, baking powder, salt, and pumpkin pie spice into a large mixing bowl. Stir in quick cooking oats (uncooked), chopped dried apricots, and chopped walnuts. Set aside.

  2. Combine eggs, milk, and oil in a small bowl; blending well. Add all at once to dry ingredients, stirring just enough to moisten. Spoon batter into a greased muffin tins, filling each cup 2/3 full.

  3. Bake in a 350°F (175°C) oven for 30 minutes, or until golden brown. Remove from oven. Let completely cool.
