  1. 300 mL thickened

  2. 1 cup full-cream

  3. 1 tablespoon instant 200 g dark chocolate

  4. 3 eggs, lightly

  1. Preheat oven 160C.

  2. Combine cream, milk and coffee in a pan on medium heat and stir until coffee has dissolved and milk is warm.

  3. Place chocolate in a heatproof bowl.

  4. Pour milk mixture over chocolate and stir until chocolate is melted and smooth.

  5. Whisk egg, cornflour and sugar in a bowl until pale and creamy.

  6. Gradually whisk in the mocha mixture until combined.

  7. Pour mixture into small oven proof ramekins.

  8. Place into a deep baking dish and fill dish with enough boiling water to come halfway up the sides of the ramekins.

  9. Bake for approximately 25-35 minutes or until set.

  10. Stand for 10 minutes.

  11. Serve with topped with cream and dusted with chocolate.
