  1. 3 each Red bell peppers

  2. 3 tb Olive oil

  3. 1 1/2 each Garlic cloves, minced

  4. Salt & pepper

  5. 3 tb Parsley, chopped

  6. 6 sl

  7. Crostini, cut 1/2" thick & - grilled

  1. Roast, seed & slice the peppers.

  2. Warm the olive oil in a large saute pan.

  3. Add the sliced peppers & garlic & cook over low heat for 5 to 10 minutes, being careful not to let the garlic burn.

  4. Add the salt, pepper & parsley & cook for another 2 minutes.

  5. Either ladle the mixture onto the grilled bread or puree the mixture & spoon over the crostini.
