  1. 3 very ripe bananas , mashed

  2. 1 cup(s) packed light-brown sugar

  3. 6 ounce(s) chopped white chocolate

  4. 1 teaspoon(s) vanilla extract

  5. 1/2 teaspoon(s) ground nutmeg

  6. Basic Quick Bread Dough

  1. Preheat oven to 350 degrees F. In a large bowl, beat bananas, sugar, chocolate, vanilla, and nutmeg. Stir mixture into Basic Quick Bread Dough until combined. Coat a 12-cup mini-Bundt pan with cooking spray. Spoon 3 tablespoons batter into each cup.

  2. Bake until a skewer tests clean when inserted into the center, 18 to 20 minutes. Remove cakes from pan and let cool on a wire rack. Repeat to make second batch.
