  1. 4 cups whole wheat flour

  2. 1 cup bread flour

  3. 1/3 cup rolled oats

  4. 1 teaspoon baking soda

  5. 1 teaspoon salt

  6. 2 1/2 cups buttermilk

  7. 1 cup raisins or currants

  8. 1 teaspoon carraway seed

  1. Preheat oven to 425 degrees F Lightly grease two baking sheets or line with parchment paper In a large bowl, stir together whole wheat flour, white flour, rolled oats, baking soda and salt Gently mix in the buttermilk until a soft dough is formed Knead very lightly, dough will be a little sticky Divide dough into 4 equal balls and flatten loaves so they are about 2 inches thick Mark each loaf with an 'X' Sprinkle top with a pinch of oats and place on prepared baking sheets Bake in preheated oven until golden brown, about 30 to 45 minutes. Tip: for more variety in flavour add 1 cup raisins or currants to the dry mix before adding buttermilk or add 1 teaspoon of caraway seeds to the dry mix before adding buttermilk you can also sprinking some caraway seed on top before baking
