  1. Mississippi Candied Yams

  2. 3 lbs fresh yams, peeled, cut in half lengthwise and sliced

  3. 1/4" thick

  4. 1 lemon, thinly sliced with peel and seeded

  5. 1 cup granulated sugar

  6. 1/4 lb unsalted butter

  7. 1/4 cup freshly squeezed orange juice

  8. 1/2 tsp cinnamon

  9. 1/2 tsp nutmeg

  10. 1/4 tsp salt

  11. Combine sugar, butter, orange juice, cinnamon, nutmeg, and salt in

  12. small sauce pan and heat gently to boiling, stirring frequently.

  13. Set aside to cool slightly.

  14. Arrange sliced yams and lemon slices in large baking dish is one

  15. layer, or slightly overlapping. Pour syrup mixture over yams.

  16. 325:F. for 2 to 2-1/2 hours, basting thoroughly every

  17. 15-20 minutes with syrup from baking pan. Turn yams occasionally.

  18. When done, yams should be tender when pierced with point of sharp

  19. knife and syrup has been almost completely absorbed and thickened.

  20. This dish may be prepared early in the day, covered lightly and reheated in oven or microwave.
