  6. 1 tb Vegetable oil

  7. 1/2 lb Smoked sausage -- sliced

  8. 1/2 lb Chicken breasts

  9. -- (boneless, skinless)

  10. 1-inch pieces 1/2 lb Shrimp, peeled & deveined

  11. 1 Garlic clove -- minced

  12. 1 c Uncooked rice

  13. 1 md Onion -- chopped

  14. 1 md Red pepper -- julienned

  15. 1 c Clam juice

  16. 1/2 c Water

  17. 1/8 ts Ground saffron*

  18. 1/2 c Frozen green peas -- thawed

  19. Heat oil in large skillet over medium-high heat. Cook

  20. 3 to 5 minutes.

  21. Add rice, onion and red pepper. Cook, stirring, until

  22. rice is lightly browned. Add clam juice, water and saffron. Bring to a boil; reduce heat, cover and simmer 20 minutes, or until rice is tender and liquid

  23. is absorbed. Stir in peas and serve.

  24. *1/4 teaspoon ground turmeric may be substituted for saffron, if desired.

  25. NOTE: Quick cooking method: Omit clam juice, water and saffron in above recipe. Substitute one (6 ounce)

  26. package prepared yellow rice mix, cooking in clam

  27. juice for uncooked rice. Stir in rice after onions

  28. and pepper are sauteed.
