  1. 1 carton College Inn ® Fat Free & Lower Sodium Beef Broth

  2. 1 can Del Monte ® Diced Tomatoes with Basil, Garlic and Oregano-No Salt Added

  3. 1/2 cup onions diced

  4. 1 garlic clove minced

  5. 2 tsp. olive oil

  6. 1 cup beef diced cooked

  7. 1/3 cup orzo

  8. 1 cup carrots sliced

  9. 2 cups baby spinach

  1. Directions 1. Cook onion and garlic in oil in large saucepan, 3 minutes or until tender.

  2. Stir in meat; cook 2 minutes. Add broth, undrained tomatoes, orzo and carrots. Simmer 10 minutes. Add spinach; cook 2 minutes.

  3. Garnish with chopped fresh basil and Parmesan cheese, if desired.
