  1. 2 pork chops

  2. Salt and pepper

  3. 1 Tbsp. bacon grease or peanut oil

  4. 1 5-oz. can pineapple chunks

  5. 2 Tbsp. chicken broth or stock

  6. 1 Tbsp. soy sauce

  7. 1 Tbsp. mirin

  1. Heat bacon grease or oil over medium-high heat.

  2. Pat pork chops dry, season with salt and pepper, and brown in a stainless steel skillet - about 3 minutes per side.

  3. Add remaining ingredients, reduce heat to medium-low, cover, and simmer for 5 minutes.

  4. Serve over rice.

  5. Note: If you want to get fancy buy some fresh pineapple and some pineapple juice. Brown the chops and set aside. Brown the pineapple then add stock, soy sauce, and mirin and scrape up browned bits. Return chops to the pan and follow step three above.
