  1. 6 green onion s, diced (white parts plus 2 inches of green)

  2. 1 teaspoon fresh ginger , minced

  3. 3 tablespoons soy sauce

  4. 5 heaping tablespoons peanut butter

  5. 1 cup water

  6. 1/4 to 1/2 teaspoon crushed red pepper flakes

  7. 1 teaspoon packed brown sugar

  8. 1 tablespoon sesame oil

  9. 1 1/2 pounds thinly sliced boneless, skinless chicken breasts, cut into strips

  10. 6 cups cooked rice or noodles

  1. To prepare sauce, in bowl combine green onions, ginger, soy sauce, peanut butter, water, red pepper flakes and brown sugar. Whisk until smooth. In large non-stick saucepan, heat sesame oil over medium-high heat and saute chicken breasts until golden, about 4 minutes per side, then remove from pan. Add sauce to pan and cook until it begins to simmer. Turn heat down slightly and continue to simmer, stirring occasionally, for another 5 minutes, until sauce begins to thicken. Return chicken to pan and cook about 2 minutes, or until chicken is cooked through. Serve over rice or noodles and sprinkle with chopped peanuts. Makes 4 to 6 servings.
