  1. Polynesian Stir Fry

  2. Makes 2 servings.

  3. 1 tsp. oil

  4. 1/2 cup pineapple chunks (reserve 1/4 cup juice)

  5. 1 cup frozen broccoli

  6. 1/2 cup each frozen green beans

  7. 1/2 cup peas

  8. 1 tbsp. minced garlic

  9. 1/2 cup reduced fat tofu, cubed

  10. 1/2 tsp. Chinese

  11. 5 spice mixture

  12. Soy sauce

  13. Heat oil and pineapple juice in pan over medium heat. Add garlic

  14. 5-spice and cook

  15. 1 minute. Add frozen vegetables. Cook, stirring

  16. often, until mostly thawed. Add tofu. Cook 2 minutes, stirring

  17. often. Add rice. Continue to cook, stirring frequently, until heated

  18. through. Add soy sauce to taste. Serve hot and enjoy!
