  1. 8 ears corn

  2. 3/4 cup diced red onion

  3. 5 T cider vinegar

  4. 5 T olive oil

  5. 3/4 tsp kosher salt

  6. black pepper

  7. 3/4 cup thinly sliced basil leaves

  8. 1 avocado , diced

  1. Cook corn 3 minutes in boiling water. Immerse in ice water. Cut off kernels. Toss with rest of ingredients and add basil. Add avocado when ready to serve.
