  1. 1 1/2c Crab mead, drained, all bits

  2. 1/2c Grated Swiss or sharp

  3. 16 Melba toast rounds

  4. 2 tb Unsalted butter, melted

  5. hot-pepper sauce (or to

  6. Several dashes of liquid

  7. taste)

  8. 1 ts Hot prepared mustard

  9. 1 ts Worcestershire sauce

  10. 2 tb Minced parsley

  11. 1 Green onion, minced

  12. 1/2ts Grated lime peel

  13. 1 tb Fresh lime or lemon muice

  14. of shell removed

  15. Cheddar cheese

  1. + Simple to prepare ans serve.

  2. If you like, use tuna, small cooked shrimp or even deviled ham in place of the crab.

  3. Preheat broiler.

  4. Combine crab, lime or lemon juice, lime peel, green onion, parsley, Worcestershire sauce, mustard and hot-pepper sauce.

  5. Taste and adjust seasonings.

  6. Brush melted butter on toast rounds and arrange in a single layerin a broiler pan.

  7. Top each round with a portion of the crab mixture, then with 1-1/2 tsp cheese.

  8. Broil until cheese is melted and crab mixture is hot.

  9. Makes 16 appetizers.
