  1. 2 cups matzo meal

  2. 1 stick parve margarine (I use Earth Balance or Nucoa)

  3. 4 egg s

  4. 2 cups boiling water salt pepper to taste

  5. 1 tsp mixed herbs (I use provence or Italian)

  1. Mix matzo meal with herbs, salt and pepper. Cut up margarine. Pour over boiling water and mix till well combined and margarine melted. Mix in beaten eggs and then leave in fridge covered for an hour till cool and firm. Bring a pot of salted water to a boil then simmer. Take small icecream scoop or tablespoon. Wet hands and form into balls. I leave them on a board then carefully put into simmering water. I put them in a few at a time so they dont stick together. When they rise to top they are ready. I take them out and chill in plastic box till needed. Can be frozen for a few weeks either dry or in broth. They can also be cooked in the chicken soup.
