  1. 3 cups 594g / 20oz Egg yolks (large)

  2. 2 teaspoons 10ml Minced shallots

  3. 1/3 cup 48g / 1.7oz Crumbled Maytag blue cheese

  4. 1/4 teaspoon 1 1/3ml Salt

  5. 1/8 teaspoon 0.6ml Freshly-ground white pepper

  6. 1 teaspoon 5ml Snipped fresh chives

  1. Combine all of the ingredients in a small stainless-steel bowl. Set the bowl over a pot of simmering water and whisk until the mixture begins to thicken, about 2 minutes. Remove from heat.

  2. This recipe yields 3/4 cup of sauce.
