  12. Peel and core apples. cut in quarters. Chop in food

  13. processor until finely grated. Transfer to a bowl and stir in lemon juice, if using. Add nuts to food

  14. processor and chop until finely chopped but with a few

  15. little chunks of nuts. Stir into apples. Add wine

  16. slowly - a few tablespoons at a time - until the

  17. mixture looks like a paste. (If you make this ahead,

  18. you will probably have to add more wine as mixture

  19. 2 CUPS --
