  1. Quesidillas

  2. 2 Tablespoons olive oil

  3. Flour tortilla (2)

  4. Regular or no fat shredded cheese, your choice flavor/type

  5. Pieces of cooked chicken or beef

  6. Steamed fresh spinach (or frozen, thawed & drained)

  7. Regular or no fat sour cream

  8. 1 fresh Roma tomato

  9. bottled salsa

  10. Dice Roma tomato into a small cup and top with several tablespoons

  11. of salsa; mix well and set aside.

  12. Put small amount of olive oil in large skillet and heat. Lay a

  13. flour tortilla in heated oil. Top immediately with shredded cheese.

  14. Note: Add steamed spinach or bite size pieces of cooked chicken

  15. or beef. Top with second flour tortilla. Cook and when it begins

  16. to brown, flip over using a large spatula and cook on the other

  17. side until it, too, is browned and cheese is melted. Remove to a

  18. dinner plate and slice into wedges, pizza-like, using a pizza

  19. cutter. Top each wedge with sour cream then salsa/tomato mixture.

  20. Good with fresh, cooked broccoli and cheddar cheese.
