  1. 500g hokkien noodles

  2. 500g chicken thigh fillets, chopped coarsely

  3. 1 clove garlic, crushed

  4. 200g broccoli florets

  5. 150g oyster mushrooms, halved

  6. 1 medium red onion (170g), sliced thinly

  7. 200g snow peas, halved

  8. cup (60ml) oyster sauce

  1. Rinse noodles under hot water; drain. Transfer to large bowl; separate noodles with fork.

  2. Stir-fry chicken in heated lightly oiled wok or large frying pan, in batches, until browned all over and cooked through.

  3. Stir-fry garlic, broccoli, mushrooms and onion in same pan until onion just softens. Return chicken to wok with noodles, snow peas and sauce; stir-fry until vegetables are just tender.

  4. Serving suggestion : Serve with a side dish of chopped fresh chilli or sambal oelek to add heat to the noodles.
