  1. 3/4 lb 340g / 11oz Chicken breast halves - boneless, skinless

  2. 1 tablespoon 15ml Oil

  3. 1 1/2 cups 355ml Chicken broth

  4. 1 1/2 cups 240g / 8 1/2oz Minute instant brown rice

  5. 2 tablespoons 30ml Chopped parsley

  6. 1 teaspoon 5ml Grated lemon peel

  7. 1/8 teaspoon 0.6ml Pepper

  8. 3 tablespoons 45ml Toasted whole almonds

  1. Recipe Instructions Brown chicken in hot oil in skillet. Add broth; bring to boil. Stir in rice. Return to boil Reduce heat to low; cover and simmer 5 minutes. Remove from heat. Stir in parsley, lemon peel and pepper; cover. Let stand 5 minutes. Sprinkle with almonds.
