  1. 2 1/2 pounds new red skinned potatoes, unpeeled -

  2. 3/4 cup olive oil -

  3. 1/4 cup fresh lemon juice -

  4. 1 1/2 teaspoons grated lemon peel -

  5. 1 medium sized green pepper, diced -

  6. 1 cup red onion, diced -

  7. 1/4 cup fresh chopped cilantro -

  8. 1/4 cup fresh chopped basil Salt and pepper to taste

  1. Cook potatoes in salted water until just tender. You don't want to over cook them. Drain and allow to cool. Cut potatoes into cubes. In a small bowl, whisk the oil, lemon juice, and lemon peel. Add the green pepper, onion, cilantro, and basil. Whisk together and pour dressing over potatoes. Add salt and pepper to taste. Let stand in refrigerator for at least an hour to allow potatoes to absorb the flavors.
