  1. 3 large bananas, mashed

  5. 2 teaspoons finely chopped lemon rind

  6. 3 tablespoons clear honey

  7. 1 tablespoon gelatine dissolved in

  8. 2 tablespoons of hot water

  9. 10 ounces double cream, stiffly whipped

  10. 5 ounces water

  1. Preparation : 1. Mix together the bananas and lemon juice.

  2. Put the milk and honey in a saucepan and heat, stirring continuously until they are blended.

  3. Beat into the bananas, with the water and lemon rind.

  4. Stir in the gelatine.

  5. Pour into a serving bowl and leave until the mixture stiffens slightly, then fold in the cream.
