  1. 1 Puff pastry

  2. 6 Eggs

  3. 1 cup 237ml Cream

  4. 2 tablespoons 30ml Butter - melted

  5. 2 cups 125g / 4.4oz Peeled, seeded and diced tomatoes - (tomato concasse)

  6. 1 cup 146g / 5.1oz Parmesan or Swiss cheese

  7. 1 tablespoon 15ml Chopped oregano

  8. Salt - to taste

  9. Freshly-ground black pepper - to taste pepper

  1. Preheat oven to 350 degrees.

  2. Roll out puff pastry to fit inside a 10-inch shallow tart pan. Crimp edges and thoroughly prick bottom of shell with a fork.

  3. In a small bowl lightly beat eggs, add cream and mix well. Add remaining ingredients and adjust seasonings to taste.

  4. Pour into tart shell and bake for 45 minutes to 1 hour, or until firm.

  5. This recipe yields 4 to 6 servings.
