  5. Crust:

  6. 1 c Fine rusk crumbs

  7. 3 tb Melted butter

  8. 3 tb Sugar

  9. 3/4 ts Cinnamon

  10. Filling:

  11. 2 lb Cottage cheese

  12. 5 Eggs

  13. 1/2 c Flour

  14. 2 ts Lemon rind

  15. 2 tb Lemon juice

  16. 1/2 ts Vanilla

  17. 1 c Heavy cream

  18. Topping:

  19. 2 c Strawberries

  20. 1/4 c Cornstarch

  21. 1 c Sugar

  22. 1/4 c Orange juice

  23. 2 tb Orange rind

  24. 3 c Whole strawberries

  25. Combine crust ingredients and press into a 9 inch

  26. 350 for 10 minutes and cool.

  27. For filling: press cheese through sieve into a bowl.

  28. Add eggs one at a time. Beat in flour and sugar. Stir

  29. in rind and juice and vanilla. Whip cream and fold in.

  30. 350 1 hour and 10 mins or until

  31. set. Cool and chill. For topping: Blend berries

  32. to puree. add sugar and cornstarch with juice and rind. Cook thick and clear. Place whole berries over

  33. chilled cake. Pour on warm glaze and chill until set. --
