  1. 1 1/2 cups chicken broth

  2. 2 tablespoons butter or margarine

  3. 1 (10-ounce) package frozen English peas

  4. 1 cup couscous, uncooked

  5. 2 tablespoons minced fresh mint

  6. 1/2 teaspoon salt

  7. 1/4 freshly ground black pepper to taste

  1. Combine broth and butter in a medium saucepan; bring to a boil.

  2. Add peas and couscous; stir well. Return to a boil, stirring occasionally. Cover, remove from heat, and let stand 5 minutes or until liquid is absorbed.

  3. Stir in mint, salt and pepper. Serve immediately.
