  1. 6 rashers bacon

  2. 300g (11 oz) broccoli florets

  3. 2 sticks celery, chopped

  4. 275g (10 oz) frozen garden peas, thawed

  5. 125g (4 oz) dried cranberries

  6. 3 spring onions, sliced

  7. 150g (5 oz) seedless green grapes

  8. 150g (5 oz) seedless red grapes

  9. 75g (3 oz) flaked almonds

  10. 4 tablespoons caster sugar

  11. 1 teaspoon salt

  12. 4 tablespoons white wine vinegar

  13. 2 tablespoons grated onion

  14. 4 tablespoons grated Parmesan cheese

  15. 350g (12 oz) mayonnaise

  1. Grill bacon, chop and set aside.

  2. In a large bowl, toss together the bacon, broccoli, celery, peas, cranberries, spring onions, grapes and almonds. In a separate bowl, whisk together the sugar, salt, vinegar, grated onion, Parmesan cheese and mayonnaise. Pour dressing over the salad. Gently toss to coat.
