  1. 1/4 lb water cress

  2. 1 lb potatoes, diced

  3. 1 lb leeks sliced

  4. 5 tb whipping cream

  5. 2 quarts of water

  6. Salt

  1. Step 1: Simmer the leeks and potatoes with a pinch of salt in water for 40 minutes.

  2. Step 2: Add the water cress and simmer for 5 minutes.

  3. Step 3: Off heat, mash the vegetables with a fork. Add salt if needed.

  4. Step 4: Stir in the whipping cream just before serving.

  5. Suggestion:

  6. Use a few water cress leaves to decorate. Boil them for 30 seconds in water, drain and decorate the plates.

  7. Wine suggestion: no wine is needed for this kind of soup ! ( French Wine Guide ).
