  1. 1 tbsp oil

  2. 1 tbsp finely chopped celery , optional

  3. 1 cup finely chopped spring onions whites

  4. 1/2 cup finely chopped capsicum

  5. 1/4 cup finely chopped french beans

  6. 1/2 cup finely chopped carrots

  7. 1/2 cup shredded cabbage

  8. 3 cups cooked rice (chawal)

  9. 2 tsp soy sauce

  10. a pinch of freshly ground white pepper powder

  11. 1/2 cup bean sprouts

  12. 1 cup finely chopped spring onion greens

  13. salt to taste

  1. Heat the oil in a wok or kadhai till it smokes, add the celery and sauté on a high flame for a few seconds.

  2. Add the spring onion whites, capsicum, french beans, carrots and cabbage and sauté on a high flame for another 3 to 4 minutes.

  3. Add the rice, soya sauce, pepper, bean sprouts, spring onion greens and salt, toss well and sauté on a high flame for another 2 minutes.

  4. To make 3 cups of cooked rice, boil enough water in a deep pan, add salt, 1 tbsp of oil and 1 cup of soaked and drained short grain rice and cook till the rice is 90% cooked.

  5. Drain using a strainer or colander and refresh using cold water. Let all the water drain out and ensure that the rice do not contain any moisture.

  6. Spread evenly on a thali and keep aside to cool completely. Use as required.
