  1. 400 g/14 oz raw salmon fillet, skinned and thinly sliced

  1. Method : Season olive oil, truffle oil, and lemon juice with salt and pepper and mix thoroughly. Distribute onto 4 flat plates and place thin slices of salmon flat on top of the sauce. Thin mayonnaise with cream. Using a spoon, distribute onto salmon. Garnish each serving with freshly chopped chives and serve with fresh baguette.
