  1. *1 roll Refrigerated Sugar Cookie Dough (can substitute chocolate or a variety of others, if desired) *2 pints Homemade Vanilla Ice Cream *1/4 cup Strawberry Preserves *1 container fresh strawberries, diced *1/4 cup chopped pecans *1 small pkg. mini white chocolate chips *1 small pkg. mini semi-sweet chocolate chips *Strawberry Shell ice cream topping (must be the kind that hardens into shell)

  1. Bake cookies according to package instructions. Make cookies large enough so that you get 12 - 16 cookies. Cool on wire rack. While cookies are cooling combine next 4 ingredients plus 1/2 of both packages of chips. Place ice cream mixture in freezer until cookies are completely cooled. Place a cookie sheet in freezer. Remove ice cream from freezer to soften enough to place a lg. spoonful between two cookies. Top with a little of the Strawberry Shell topping and quickly sprinkle with a little bit of each of the chips. Make these one at a time and place them on cookie sheet that is already in freezer. After your Strawberry Sandwiches have set, wrap each one gently with aluminum foil and return to freezer. Recipe can be doubled so that you can keep these delicious frozen treats on hand. This recipe works well with almost any refrigerated cookie dough.
