  1. 1/2 cup 99g / 3 1/2oz Butter

  2. 3/4 cup 177ml Honey

  3. 2 Egg

  4. 1 teaspoon 5ml Vanilla

  5. 2 cups 125g / 4.4oz Flour

  6. 3 teaspoons 15ml Cinnamon - ground

  7. 1 teaspoon 5ml Baking powder

  8. 1/2 teaspoon 2 1/2ml Baking soda

  9. 1/2 teaspoon 2 1/2ml Salt

  10. 2 cups 125g / 4.4oz Oats - rolled

  11. 1/2 cup 73g / 2.6oz Nuts - chopped

  1. Preheat oven to 375 F. (will be turned down to 300F. for second baking.) Cream butter. Beat in honey, eggs and vanilla.

  2. Combine flour, cinnamon, baking powder, baking soda and salt; mix well. St into butter mixture. Stir in oats and nuts.

  3. On greased baking sheet, shape dough into 2 (10x3x1-inch) logs. Bake at 375 F. for 12-15 minutes, or until lightly browned. Cool 5 minutes; remove to cutting board. Cut each log into 1/2-inch strips; place on cookie sheet.

  4. Bake at 300F., 25-30 minutes o r until crisp throughout strip.
