  6. 2 c Milk

  7. 6 tb Butter

  8. 3/4c Flour

  9. 6 tb Sugar

  1. + Directions : Heat oven to 375 degrees.

  2. Brush 6 cup souffle dish generously with butter.

  3. Sprinkle with sugar and tip the pan so the sugar covers the butter.

  4. Tap on the counter and discard excess sugar.

  5. Combine 5 tbsp.

  6. sugar and flour,stirring to blend well.

  7. Set aside.

  8. Melt butter in heavy saucepan.

  9. Add flour mixture and heat until it bubbles.

  10. Use a whisk to beat in milk and bring to a boil.

  11. Remove from heat.

  12. Beat in liqueur and orange rind,then beat in egg yolks one at a time.

  13. Set aside.

  14. Beat egg whites until very foamy.

  15. Beat in 1 tbsp.

  16. sugar and beat whites until stiff peaks form.

  17. Blend half of the whites into base mixture,then fold base into egg whites.

  18. Pour half the mixture into souffle dish,sprinkle with 2 tsp.

  19. nuts,then pour in remaining souffle mixture.

  20. Sprinkle more nuts on top,if desired.

  21. Bake for 45 minutes.
