  1. 1 medium onion -- sliced

  2. 1 tablespoon vegetable oil

  3. 1 cup long-grain rice -- uncooked

  4. 1/2 cup raisins

  5. 2 1/2 cups water

  6. 3 tablespoons chunky peanut butter

  7. 1 tablespoon honey

  8. 2 teaspoons chicken bouillon

  9. 1 teaspoon curry powder

  10. 1/2 teaspoon salt

  11. 1/4 teaspoon ground ginger

  12. 1/4 teaspoon ground cinnamon

  1. Preparation : Heat oil in 12-inch skillet over medium heat. Cook onion in oil. stirring frequently, until onion is tender; drain. Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer about 35 minutes, stirring occasionally until rice is tender.
