  1. Peppermint Fondue

  2. 20 fl oz / 2 1/2 cups single (light) cream

  3. 5 oz / 1 cup icing sugar

  4. 6 tsp cornflour

  5. peppermint essence, to taste

  6. Put cream and sugar into a saucepan and heat gently until almost

  7. boiling. Blend cornflour smoothly with 1 tablespoon water, add to

  8. cream and continue to heat, stirring all the time until thickened.

  9. Add essence, to taste, then pour into a fondue pot and serve hot

  10. with chocolate sponge cake squares.

  11. (Serves 4)
