  1. 8 oz 227g Tortilla chips

  2. 1/2 cup 31g / 1.1oz Corn kernels - drained if necessary

  3. 2 Tomatoes - chopped

  4. 4 Scallions - chopped

  5. 4 tablespoons 60ml Sour cream

  6. Salt - to taste

  7. Freshly-ground black pepper - to taste

  8. 1/2 cup 73g / 2.6oz Grated Cheddar cheese

  1. Preheat the broiler. Spread the tortilla chips in a large, shallow flameproof dish and scatter with the corn kernels, tomatoes, and scallions. Spoon the sour cream over, season to taste, and sprinkle with the Cheddar cheese.

  2. Broil for 2 to 3 minutes until the cheese melts and is bubbling. Serve at once.
