  1. 1 seedless cucumber , shredded and drained

  2. 1 cup carrot , shredded (250 ml)

  3. 1/2 cup red bell pepper , diced (125 ml)

  4. 1/4 cup green onion , chopped

  5. 1/4 cup roasted salted cashews (60 ml)

  6. 2 tablespoons sesame oil

  7. 1 tablespoon honey

  8. 1 tablespoon vinegar

  9. 1 teaspoon soy sauce

  10. 1/2 tablespoon sesame seeds , toasted

  11. 2 teaspoons lemon juice

  12. 1 small garlic clove , minced

  1. In a medium bowl combine cucumber, carrots, red bell pepper, and onion.

  2. In another small bowl combine the ingredients for the sesame dressing and whisk together.

  3. Pour dressing over cucumber mixture and chill until chilled. Add cashews just before serving and toss.
