  1. MARASCHINO CHERRY BARS

  2. Crust:

  3. 2 cups flour

  4. 1/3 cup sugar

  5. 3/4 cup butter (or marg.), softened

  6. Filling:

  7. 2 eggs , slightly beaten

  8. 1 cup firmly packed brown sugar

  9. 1/3 cup flour

  10. 1 1/2 tsp. baking powder

  11. 1/2 tsp. salt

  12. 1/2 tsp. vanilla

  13. 10-oz. jar maraschino cherries , drained/chopped (reserve juice )

  14. 1/2 cup chopped walnuts

  15. Frosting:

  16. 2 Tbsp. butter (or marg.), softened

  17. 2 1/2 cups powdered sugar

  18. 3 to 4 Tbsp. reserved cherry juice

  19. 3 to 4 Tbsp. flaked coconut

  1. Heat oven to 350 degrees. In large bowl, combine first 3 ingredients; blend until crumbly. Press mixture into ungreased 13x9-

  2. inch pan.

  3. Bake at 350 for 12 to 15 minutes or until lightly browned.

  4. In small bowl, combine all filling ingredients; mix well. Pour over crust. Bake at 350 for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool.

  5. In small bowl, combine all frosting ingredients except coconut; beat until light and fluffy. Spread frosting over cooled bars; sprinkle with coconut. Cut into 36 bars.
