  1. 1/4 c. butter

  2. 2/3 plus 1/2 c. sugar

  3. 1 lg. egg

  4. 2 lg. egg whites

  5. 1 T. grated lemon rind

  6. 1/2 tsp. vanilla

  7. 2 1/4 c. flour

  8. 1 tsp. baking powder

  9. 1/2 tsp. baking soda

  10. 8 oz. lemon yogurt

  11. 1 c. red raspberries

  12. 1/2 c. lemon juice

  1. Cream butter and 2/3 cup sugar until light and fluffy. Add egg, egg whites, lemon rind and vanilla. Beat until blended. Add flour, baking powder and baking soda. alternating with yogurt. Stir in raspberries. Pour into a 4 x 8 greased loaf pan. Bake in 350° oven for 55 minutes or until center tests done. Makes 1 loaf. Yield: serves 0
